Southwest Chicken, Peppers and Rice

Ingredients

  • 8 oz boneless skinless chicken breast, cut into bite sized chunks (150 mg sodium in the brand I used.)
  • 1 T oil
  • 1 medium sized poblano pepper, seeded and coarsely chopped
  • 1 medium onion, coarsely chopped
  • 2 toes fresh garlic, diced
  • 1 c frozen corn kernels
  • 1 c minute brown rice
  • 1 Mrs Dash chili seasoning packet (or seasoning of your choice)
  • 1 T Daks Southwest seasoning
  • 1.5 c water

Directions

Saute chicken in oil until no longer pink, then set aside.

Date garlic, onion and pepper until softened.

Return chicken to skillet and add rice, corn, water and seasonings. Bring to a boil, then cover and reduce heat to medium-low and cook until liquid is absorbed and chicken is cooked through. (may need to add a little more water.toward the end)

You may want to top with a sprinkle of cheese and/or sour cream.
