Oven Baked Cheesy.Chicken Taquitos

Ingredients:

  • 8 oz grilled or baked chicken, shredded
  • 4 oz cream cheese, room temperature
  • 3 T. Trader Joe’s Fire Roasted Tomato Salsa- no salt added
  • 2 T. Trader Joe’s Chili Pepper Sauce  – no sodium
  • 1/4 t. garlic powder
  • 1 t. no salt chili powder
  • 1/2 t. onion powder
  • 3/4 t. cumin
  • juice of 1/2 lime
  • 5 stems of fresh cilantro, chop leaves to use
  • 1 scallion, green and white parts
  • 1 c. shredded cheese- your choice of Pepper Jack, Jack, Cheddar or your favorite
  • 12 corn tortillas (5mg sodium each) heated in microwave by wrapping them in a damp paper towel. Heat for about 30 seconds. They need to be pliable to roll when filled.

Directions:

Heat cream cheese and salsa to spreadable consistency.

Mix in garlic and onion powder, cumin, lime juice, cilantro scallion and cheese.

Now, mix in the chicken.

Place 3 tablespoons of the chicken mixture in the center of one corn tortilla, roll gently but tightly and place seam side down on a rack in baking dish or cookie sheet.

Do not allow them to touch.  Repeat with the rest of the tortillas. This will allow the tortillas to get very crispy.. .

Bake at 425 degrees for 15 -20 minutes.

Serve hot with guacamole, sour cream. low sodium salsa and chips or just use as a snack.

Makes 12 taquitos.
