Meat Loaf with Chili Sauce

Ingredients

  • 2 lb. ground beef
  • 1 egg, beaten
  • 1 c. sweet onion, diced
  • 1 c. celery, diced
  • 1/3 c. sour cream
  • 2/3 c. oatmeal (blend in blender to make crumbs)
  • 1 T. parsley
  • 2 t. French’s Worcestershire sauce- lower sodium

Directions

Mix well and pat into an 8 x 8 baking pan sprayed with Pam

Chili Sauce:
1 c. no salt tomato sauce
1/4 c. white vinegar
1 t. lemon juice
2 T. brown sugar
1 t. onion powder
1/3 c. light corn syrup

Place ingredients in small sauce pan.

Whisk to mix, heat on LOW for 30 minutes- stir occasionally.

Pour about 1/2 c. over top of meatloaf and bake 350 degrees for about an hour.

Meatloaf has 125 mg sodium if cut into 6 slices- 5 oz.each including the Sauce (has 35 mg sodium in about 1/2 cup.)

So, whole meatloaf is about 712, sauce about 35.
