Ingredients:

  • 6 large eggs
  • 1/2 cup Half and Half cream
  • 1/8 tsp garlic powder
  • 1/2 tsp dried basil
  • 48 grams onions, raw, diced
  • 1/4 cup Fancy Shredded Swiss Cheese (Wegman’s)
  • 1/4 cup Shredded Swiss and Gruyere Cheese (Trader Joe’s)
  • 38 grams white mushrooms, fresh, sliced
  • 32 grams green peppers, diced
  • 64 grams asparagus, fresh, steamed, diced (leftovers)
  • 202 grams baked potato without skin, diced (leftovers)
  • 160 grams of low sodium ham, diced
  • 174 grams Roma tomatoes (cut in slices)

Directions:

1. Pre-heat oven to 375°F

2. Whisk the eggs in a large bowl using a fork, add all the other ingredients except for the tomato slices and stir well.

3. Grease an oven proof casserole dish or large skillet and pour all in, make sure all ingredients are evenly distributed.

4. Position the tomato slices in attractive arrangement on the top of the frittata.

5. Place the frittata in the center of the pre-heated oven and bake for about 50-60 minutes or until center is set.

6. Remove the frittata from the oven and slice into 6 wedges. Serve immediately

Makes 6 servings, each serving has about 188 calories, 232mg sodium, 12g carbohydrates with the ingredients used.
