Ellie’s Green Beans

Ingredients:

  • 2 lbs. fresh green beans
  • 3 Tbs. white wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp. grated orange zest
  • 1/4 tsp. pepper
  • 1/3 c. olive oil
  • 1/4 c. sliced almonds
  • 1/4 c. Trader Joe’s low sodium French fried onions

Directions:

1. Bring pot of unsalted water to a boil, add beans, cook until tender (7-9 min.). Drain and remove beans to a bowl. Combine vinegar, garlic, orange zest & pepper. Slowly whisk in oil until mixture thickens slightly.

2. In serving bowl combine beans with vinaigrette until coated. Heat skillet over high heat. Add almonds and cook, stirring frequently, until toasted and fragrant (1-2 min.). Add French fried onions, cook until heated, about 30-40 seconds. Remove from heat; sprinkle over green bean mixture and serve!!  🙂

3. This recipe is from a friend, and I tried it at a memorial lunch. I knew I had to get the recipe, although my friend did not know the origin.
