Ingredients:

  • 12 oz NY Strip steak , trimmed of outside fat and cut into 6 thin slices by butcher .. approx. 42mg. each. (You can also use other thin cuts of beef , like skirt steak or sirloin, pounded thin, but do not need to tenderize the NY Strip.
  • 6 thin wedges of dill pickle, mine was 25mg. each.
  • 2 tsp grainy mustard, divided , mine was 13mg each.
  • 1/2 slice bacon, mine was 34mg. per.
  • 2 cups unsalted beef broth, @75mg per cup, was 25mg.
  • 1 med onion, dived.
  • 1 clove garlic, minced.
  • 6 oz fresh mushrooms, sliced.
  • Fresh cracked pepper.
  • Dash of garlic and onion powder.
  • 1 tbsp cornstarch.
  • 1 tbsp olive oil.
  • 2 tbsp unsalted butter.
  • Dash of beef bouillon.
  • Splash of red wine vinegar. You can use a little wine, also , but my liver won’t allow it.

Directions:

1. Lay meat flat, spread with a tiny bit of the mustard, sprinkle a little of the diced onion, lay the bacon and pickle inside, roll up tightly and secure with skewer or tie with butcher’s string.

2. Brown on all sides in olive oil in skillet, remove and set into baking dish.

3. Add onions, mushrooms, garlic, pepper, and butter, a dash of beef Herbox bouillon to skillet, sauté for a couple of minutes.. whisk in cornstarch. Add beef broth, bring to a slow simmer, stirring to thicken a little. Add a dash of red wine vinegar. You can also add some Mrs Dash, but I’m not crazy about the flavor.

4. Pour over roulades, bake on 300 for 35-45 minutes. Longer if using a tougher cut of meat. Serve over egg noodles, dumplings, or rice.

5. Mine turned out to be 139mg. per roll. You can use a different pickle , omit the bacon altogether, or use unsalted bouillon and water only to reduce sodium if your diet won’t allow. For me, one roll is enough, with a side salad or steamed veggie.

6. My dear, adorable mother-in-law, who was born in Glasgow, made this for my father-in-law. She taught me her version of the recipe. There are lots of other variations… but I usually make hers, with a few tweaks for the sodium. We always image her smiling down at us when we have it.
