Asian Salad and Creamy Asian Dressing

Ingredients:

Salad

  • 2 slices purple cabbage
  • 1/2 bunch romaine lettuce
  • 2 oz fresh snow peas
  • 2 oz carrots
  • 2 green onions
  • 2 mini red peppers
  • 2 T. parsley. diced
  • 1 c. mandarin oranges
  • 2 T.sesame seeds, toasted
  • 1/4 c. sliced almonds, toasted

Directions:

Chop the cabbage and romaine,
Remove the tips from pea pods and slice diagonally.
Grate the carrot.
Thinly slice the onions.
Dice the peppers
Chop the parsley.
Drain the mandarin oranges.

Add the first 6 ingredients above to a medium size mixing bowl and toss lightly.

Divide the salad between plates, divide the oranges between plates,and top with dressing.

Sprinkle on the sesame seeds and toasted almonds.

Makes 6 servings.

Creamy Asian Salad Dressing

Dressing:

  • 1/2 c. Best Foods or Hellman’s mayo
  • 2 t. honey mustard
  • 3 T. rice wine vinegar
  • 2 1/2 t. sesame oil
  • 6 T. plus 1 t. honey

Directions:

Mix well and store in refrigerator.

This makes 1 cup.

Total sodium is 770mg sodium

1 t. dressing is 16mg sodium
1 T. dressing is 48mg sodium
