Slow Cooker Chicken Pot Pie with Drop Biscuits

Ingredients:

  • 12 oz. cooked chicken, chopped
  • 1/2 onion, chopped
  • 1 rib celery, chopped
  • 1 small Idaho potato, chopped
  • 2 c. frozen mixed vegetables (corn, green beans, carrots, peas)
  • 1/4 t. pepper
  • 1/2 t. poultry seasoning
  • 1 can Cream of Chicken Soup
  • 1/2 c. milk
  • 2 t. Herb Ox No Salt Chicken buillon
  • 2 T. fresh parsley, chopped
  • 2 1/4 c. low sodium buttermilk baking mix
  • 2/3 c. milk

Directions:

Heat the slow cooker on HIGH add chicken, onion, celery, potato, vegetables, garlic, pepper, seasoning,

Mix soup, milk and Herb Ox. Pour into slow cooker over the chicken mixture. Mix well. Cover.

Cook on HIGH for 3 hours, 15 minutes.

Mix together the parsley, baking mix and milk. Drop in spoonfuls on top of the chicken mixture. Cook for an additional 30 minutes, covered.

Total sodium is 1455mg sodium.
Makes 6 servings. 242.5mg sodium each.
