Quick Chicken Stir Fry

Ingredients

  • 10 ounces chicken breast, thinly sliced
  • 2-4 tablespoons sesame oil for frying
  • 1 16 oz. bag frozen Trader Joe’s Stir Fry Vegetables ( or any other frozen stir fry vegetables- if a seasoning packet is included- do NOT use it.)
  • Cooked rice ( use no salt Herbox chicken bullion in the water to cook the rice)
  • Thinly sliced scallions, optional
  • Low Sodium Soy Sauce, or whatever you want to substitute (I use 1/2 coconut aminos and 1/2 low sodium soy sauce for less sodium), optional

Directions

In a large fry pan or wok, cook the chicken in the hot oil til no pink remains.

Add the frozen vegetables and the water chestnuts and a bit of oil if needed, and stir fry for 6 or 7 minutes more.

Place hot rice on plate, top with chicken mixture. Add scallion and soy sauce if wanted.

Entire recipes is about 535 mg sodium without the soy sauce.
