Pesto Sun Dried Tomato Chicken Pasta

Ingredients:

  • 18 oz chicken breast, chopped
  • 3 T. olive oil
  • 2 cloves garlic, minced
  • 1/2 c. Kalena’s Pesto- found on our website
  • 6 sun dried tomatoes in oil, chopped
  • 9 oz angel hair pasta
  • Parmesan cheese, optional for garnish

Directions:

Fill a large sauce pan 1/2 .with water and place on high heat until boiling. Add pasta and cook 3 minutes. Rinse and drain.

Heat a large skillet or wok to medium high and add the olive oil and chicken.Stir fry for 3 minutes, stirring constantly. Add the garlic and cook another minute or two.

Now add the pesto and tomatoes to the chicken. Heat a minute. Add the pasta and mix very well with tongs making sure all the pesto and chicken are incorporated. Using tongs makes it easy to serve.

Serves 6 smaller servings or 4 very large servings.

Total recipe is 1228mg sodium. This does not include the sodium in Parmesan if you are using it.

Prep and cook time is 25 minutes.
