Oven Baked Spareribs with Rice Stuffing

Ingredients:

  • 2 strips of spareribs (abt 3 lb)
  • 1 cup instant rice (Minute Rice)  or 2 cups prepared rice
  • 1 1/4 cups no salt added beef broth
  • 1 1/2 tbsp unsalted butter
  • 1/2 cup onion, chopped (1/2 medium onion)
  • 1/2 cup white mushrooms, sliced
  • 1/2 cup celery, diced (1 stalk)
  • 1/2 tsp paprika
  • 1/2 tsp marjoram
  • Dash of pepper

Directions:

1. Boil rice with the beef broth until almost tender.

2. Cook onion, celery and mushrooms in unsalted butter about 3 minutes and combine with rice and seasonings.

3. Spoon stuffing on one strip of the ribs and cover with the other.

4. Wrap in foil and put in a roasting pan.

5. Bake in 350° oven for one hour.

6. Remove cover of foil and bake for another 45-60 minutes.

Makes 6 servings…each serving has 744 calories, 197mg sodium, 15.2g carbohydrates
