Low Sodium Egg Muffins

Ingredients

  • 8 strips of loso bacon
  • 1 small to medium size zucchini
  • 1 small red bell pepper…
  • 8 eggs
  • ½ cup milk or half and half
  • 2 tsp of hot sauce (low sodium)
  • ½ shredded swiss cheese

Directions

Grease muffin tin and preheat oven to 350 degrees.

Fry 8 strips of bacon and remove from skillet and set aside to cool.

In the bacon grease, lightly saute one small shredded zucchini and one diced red bell pepper.

In a mixing bowl beat 8 eggs, ½ cup of half and half and 2 tsp of hot sauce, then fold in the sauted zucchini and red bell pepper and ½ cup of swiss cheese (or cheese of your choice)

Crumble up the bacon and place a few pieces at the bottom of each muffin cup, then pour in the egg mixture, filling the each muffin cup roughly 2/3rds full.

Bake for 20-25 minutes until fully cooked through (press on the center of muffin and it should be slightly firm).
