Cran-Apple Microwave Bread Pudding

Prep time: 15 min + 1 hour or overnight     Cook time: 10-12 minutes

Ingredients:

  • homemade, no salt bread, cut into cubes (abt 5 cups of cubes)
  • 2 large eggs
  • 2 cups 1% milk
  • 1/4 cup sugar
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 medium apple, peeled, cored, chopped
  • 1/2 cup dried cranberries

Directions:

1. Spray a large, microwavable bowl or casserole dish with non-stick spray and set aside.

2. Cube the bread and place cubes in the prepared bowl.

3. In another bowl, add the two eggs and beat well, add the milk, sugar and vanilla extract, mix well and pour over the bread cubes. Mix well and let the mixture sit for about an hour or cover and place in the refrigerator overnight so the bread will begin to absorb the liquid.

4. When the bread begins to break down and become mushy, add in the butter, cinnamon, chopped apple and cranberries, mix well.

5. Place the bowl in the microwave for 5 minutes on high. At the end of 5 minutes, remove the bowl from the microwave and mix again to make sure the butter has melted and the fruit is mixed throughout.

6. Return the bowl to the microwave and continue to cook in 2 minute intervals until the liquid has all been absorbed and the center of the pudding is a bit spongy but is dry.

7. Remove from the microwave and set on a wire rack to cool slightly before eating. The pudding will firm up as it cools.

8. Serve hot or cold with milk or cream, if desired, or with ice cream.
