Ingredients:

  • 3 cups old fashioned oatmeal
  • 1 tsp Featherweight no sodium baking powder
  • 1/2 tsp ground cinnamon
  • 1/3 cup brown sugar
  • 1/2 cup homemade unsweetened applesauce
  • 1 1/2 cups 1% milk
  • 2 eggs
  • 3 tbsp unsalted butter, melted
  • 1/2 cup dried cranberries
  • Non-stick cooking spray
  • maple butter* and fresh fruit for serving (optional)

Directions:

1. Pre-heat the oven to 350°F

2. Line 16 muffin tin cups with paper liners. Give the liners a light misting of the non-stick cooking spray.

3. Place the oatmeal, baking powder, cinnamon, brown sugar, applesauce, milk, eggs and butter in a large bowl. Mix well until all the ingredients are well blended. Add in the dried cranberries and mix in.

4. Divide the oatmeal mixture into the muffin cups.

5. Place the filled muffin tin/tins into the pre-heated oven and bake for 20-25 minutes or until tester comes out clean and the muffins are nicely browned.

6. Remove from the oven and let the muffins rest for 5 minutes before removing from the pan to cool on a wire rack.

7. Serve, topped with maple butter and fresh fruit, if desired.

*to make a very simple maple butter: mix 2 tbsp softened unsalted butter with 1 tbsp maple syrup and a dash of cinnamon, mix well…refrigerate any that is leftover
