Ingredients

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup cilantro, chopped
  • 1⁄2 cup sliced red bell pepper
  • 6 medium green onions with tops, sliced
  • 2 tsp extra virgin olive oil
  • 1⁄3 cup rice vinegar
  • 2 tbsp lime juice, freshly squeezed
  • 5 tsp sugar or sugar substitute
  • 3 tbsp dry roasted peanuts or slivered almonds, unsalted

Directions

1. In a large bowl combine the cabbage, cilantro, pepper, and onions.

2. In a small bowl combine and mix the olive oil, vinegar, lime juice, and sugar.

3. Add the dressing mixture and nuts to the cabbage mixture and mix well.
